The theoretical and methodological foundations of the formation and development of the category «business process efficiency» in the context of the evolution of economics and modern management concepts are presented. The relevance of the research is due to increased competition, digitalization of economic activity and the increasing role of the process approach in ensuring the sustainable development of organizations, including catering enterprises. Scientific approaches to determining the essence of the effectiveness of business processes are generalized and systematized, as well as key directions of their evolution are identified. As part of the study, an analysis of domestic and foreign scientific sources was carried out, which made it possible to identify the main stages of the formation of the concept of «business process efficiency» and determine its place in the modern management system. Based on the generalization of scientific approaches, the author identifies and systematizes the main concepts of evaluating the effectiveness of business processes. It is shown that in the context of digital transformation and the increasing complexity of the business environment, traditional approaches need to be supplemented with tools focused on flexibility, integration and strategic orientation of organizations. Special emphasis is placed on the specifics of applying these approaches in the field of public catering, characterized by high demand dynamics and the need for operational process management. The author's classification of approaches to defining the concept of business process efficiency is formulated.
