EXPLORING THE INTERPLAY BETWEEN OPERATIONAL EFFICIENCY AND MARKET COMPETITIVENESS WITHIN THE FOOD SERVICE SECTOR

Abstract:
The article examines current problems and structural trends in the Russian foodservice market through the integration of three evidence layers: national quantitative indicators, regional differentiation and a curated dataset of expert opinions published in open sources during the most recent observation window. The study is designed within the logic of management analytics and combines comparative, dynamic and interpretive analysis. The empirical basis makes it possible to move consistently from macro indicators of turnover and market structure to regional heterogeneity and then to the discourse of practitioners and analysts. The results show that market expansion is accompanied by a contradiction between nominal growth and uneven operational sustainability. The expert field confirms the centrality of demand, traffic, labour shortages, inflation and competition with retail, while also signalling opportunities related to ready to eat food, fast formats, street service and adaptive management models. The study draws conclusions on the current management priorities of the industry, linking efficiency and competitiveness objectives to ensure strategic sustainability amidst market fluctuations.
